Product Description
A section of our "Estate Chardonnay" is selected during harvest to remain unpicked for an additional two weeks. This extra time on vine produces Chardonnay grapes that are very ripe and sweet. Extra care is needed to harvest these grapes and so they are picked gently by hand at night. The late harvested Chardonnay grapes are pressed at the winery before sunrise and the heat of the day. The pressing is done slowly and gently, a process which retains the intense fruit flavors without extracting harsh and bitter characteristics from the skin and seed. The wine is settled in the stainless steel tank for three days prior to being filled in "neutral oak" wine barrels. The filled wine barrels are set outside in the sun and weather for the next 5 YEARS.
