Rob's philosophy is to use Italian varietals, combined with California climate and winemaking techniques to enhance the true characteristics of the Pinot Grigio varietal. PAVI Wines continues to be a leader of Italian varietals produced in California. 100% Pinot Grigio. 50% Whole cluster pressed, 100% tank fermented, aged sur lie for three months, no malolactic fermentation, no oak. The grapes are harvested at different brix and acid levels to maximize the varietal character and to contribute the best flavor profiles of the varietal from our vineyard sites. We start to harvest around 21 brix with an acidity of .70 g/l.
