Product Description
Harvested after a very warm summer, with an extended hang time until late October. Pressed whole cluster after sorting into a stainless tank. Cold settled for 3 days, then racked to oak for barrel fermentation. The primary fermentation proceeded slowly at low temperatures (<18C) and was allowed to complete to dryness. The barrels were then direct inoculated for secondary fermentation, which proceeded over two months during the winter. The barrels were stirred on lees weekly for 6 months during elevage. Bottled in May, 2013.
