BLENDING INFORMATION/VARIETAL COMPOSTITION: 100% Estate-grown Riesling PROCESS: The grapes for our 2011 Reserve Riesling were machine picked, then crushed and pressed. We added enzymes to aid settling, and dextrose to reach 21ºBrix. We inoculated with Epernay II yeast. We added DAP and Fermaid (yeast nutrients) at approximately 1/3 of the way through fermentation. At 1.7ºBrix, we stopped the fermentation by setting the cooling jacket to -2.0 ºC, stunning the yeast. After several days to a week of very cold temperatures, yeast activity ceased, and we added SO2 to the wine to ensure total yeast death. We racked the wine off heavy lees to preserve the clarity, crispness and fruit purity in the wine. We added ascorbic acid to the wine to prevent the possible formation of ATA (atypical aging) that seems to be associated with grapes grown in drought conditions. We filtered the wine three times, and then bottled.
